This fruit for this wine was sourced from three different vineyards all located near Birdwood in the Adelaide Hills. The fruit was allowed to reach quite a high sugar level prior to picking with most parcels coming in at around 13.0 Baume. The fruit was picked during the cool of the morning and transported to the winery in Clare in 2 tonne bins.
The Adelaide Hills region experienced an exceptionally dry summer and autumn. Temperatures were not excessive which resulted in well balanced fruit and very low disease pressure. After a bumper 2017 vintage yields were back to historical averages.
Crushing and destemming commenced straight away to reduce the level of colour pick up from the dark skins of the Pinot Gris. Pressing and free run juice fractions were treated separately prior to blending for fermentation.
This wine provides a very slight apricot hue with aromas of floral aromatic pear and peach. Red apple and hints of sage are also evident. The palate carries a slight sweetness which combined with the warmth of the alcohol forms a textured full bodied palate.
