Growing Conditions

A mild, dry spring without frost saw early bud-burst and rapid vine growth in the Clare Valley, with much of the flowering complete by November. Well-timed rains and continuing mild weather conditions throughout January and February defined the 2016 vintage. Veraison was slightly delayed, allowing the fruit time to reach its best, with Shiraz of exceptional quality being produced.

Winemaking

This single vineyard Shiraz parcel was destemmed and crushed into open top fermenters, allowing for careful monitoring throughout the winemaking process. A five-day cold-soak to extract good colour and flavour from the fruit was followed by the start of fermentation. After fifteen days on skins, the ferment was pressed to 30% new and 70% seasoned French oak Hogsheads, to mature for 24 months. This wine is unfined and unfiltered.
